Recipe
Marinated Chicken

4 onions ¾ cup dry with wine
6 breasts of chicken 2 tbsp olive or vegetable oil
2 clove garlic, minced 2 tsp salt
2 pimentos, sliced thin ½ tsp pepper
1 stalk celery, chopped 1/8 tsp dried ground red peppers
3 tbsp chopped parsley 2 bay leaves
1/3 cup tarragon vinegar

Place half the onions in an earthenware or other heatproof casserole dish (not metal). Arrange the chicken over them and cover with the remaining onions, the garlic, pimentos, celery and parsley.
Combine the vinegar, wine, oil, salt, pepper, red peppers and bay leave.
Add to the casserole.
Bring to a boil, cover and cook over medium heat 35 minutes or until chicken is tender.
